Coyote Run Farm Chocolate Beet Cake

Temp:  350 degrees F     Cook Time: 40 min.    Yield: 18 pieces

 

Ingredients:

2 t. lemon juice                                     4 Coyote Run Farm eggs

1 c. Coyote Run Farm beets, boil & grate         2 T. Blue Gate Farm honey

1 t. salt                                                             ˝ c. milk                                             

2 t. baking soda                                                2 t. vanilla extract

2 c. white sugar                                                3 T. cream

 ˝ c. unsweetened cocoa powder                     1 t. vanilla extract

1 ˝ c. melted butter                                          1 pinch salt

2 ˝ c. all-purpose flour **                                1 pound powdered sugar

                                                                        3 oz. Reichert’s Dairy Air goat cheese

 

**As a substitute we use 1 c. Mast Family Farm whole wheat flour, 1 c. Paul’s Grains 7 grain flour, and ˝ c. regular flour. Amounts may be adjusted depending on personal preference.

 

Directions:

  1. Grease one 9 x 13 inch pan. Preheat oven to 350 degrees F (175 degrees C). Sprinkle lemon juice over beets, set aside.
  2. Combine flour, 1 teaspoon salt, soda, white sugar, cocoa, melted butter, eggs, honey, milk, and 2 teaspoons vanilla in a large mixing bowl. Stir in beets. Beat 2 minutes at medium speed of mixer. Pour into prepared pan.
  3. Bake at 350 degrees F (175 degrees C) about 40 minutes. Cool and frost.
  4. To make frosting: combine cream and softened goat cheese, 1 teaspoon vanilla, and pinch of salt.  Add powdered sugar, beat until fluffy. Spread on cake. Add nuts if desired.
