2 cups grated Coyote Run Farm zucchini
1/2 cup soft butter
1/2 cup oil
1 3/4 cup sugar
2 Coyote Run Farm eggs
1 tsp. vanilla
1/2 cup vanilla yogurt
1 1/4 cups whole wheat flour
1 1/4 cups white flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
4 Tbsp. cocoa
1/2 tsp. baking powder
1/2 cup semisweet chocolate chips (1/2 of a 12 oz. pkg.)
Directions:
Temp: 325 degrees. Time: 55 minutes. Yield: 18 - 24 pieces.
Grate zucchini with peel and set aside. Cream butter, oil and sugar. Beat in
eggs, yogurt and vanilla. Mix flour, baking powder, baking soda and
remaining dry ingredients together in a bowl. Add to creamed mixture. Stir
in zucchini. Pour batter into 9 x 13 inch pan. Sprinkle chocolate chips on
top of cake. Bake at 325 degrees for 55 minutes or until done.
**If desired, 1/2 cup of pecans may be sprinkled on top of cake before
baking.
**Using yogurt in this recipe makes this cake extra moist.
